芒果奶凍杯

材料

芒果 1個
魚膠片 1片
黃糖 1湯匙
淡忌廉 80毫升
蛋白 1隻

步驟

  1. 魚膠片浸軟,下熱水座溶。
  2. 芒果起肉切成茸。
  3. 加入糖作攪拌攪攪勻,再加入魚膠水拌勻。
  4. 淡忌廉打起至軟滑狀。
  5. 加入芒果茸中攪勻。
  6. 蛋白打起至泡沫狀加入芒果漿中拌勻。
  7. 最後,將芒果漿下杯中,雪3小時即成。

  1. 魚膠片用凍水浸軟,切勿用熱水浸。
  2. 魚膠片浸軟後,隔水座溶。

芒果雖然含有多種營養素,但過敏體質人士應慎吃,原因是芒果含有一種名為「組織胺」的物質,容易造成過敏現象。芒果不僅含有組織胺,更會促進身體釋放組織胺,導致過敏反應。因此,有些人進食芒果後口脣會發紅和痕癢,原因正與組織胺的釋放有關。

Mango Pudding Cup

Ingredients

Mango 1 piece
Gelatine 1 strip
Brown sugar 1 table spoon
Unsweetened cream 80ml
Egg white 1 portion

Steps

  1. Soften up the gelatine in cold water. Then, melt it in hot water.
  2. Peel and squash the mango into a paste.
  3. Add the sugar and mix. Then, add the gelatine water.
  4. Beat the cream until it thickens.
  5. Pour the mango paste into the cream and mix.
  6. Beat the egg white until it bubbles, then, add it into the mango mixture and stir.
  7. Finally, pour the mango mixture into small cups. Then, freeze it in the fridge for 3 hours.

Tips

  1. Soften the gelatine strip in cold water. Don’t try to soften it in hot water.
  2. After softening the gelatine strip, drain it before use.

Nutrition Analysis

Tea pudding, coffee pudding and milk pudding are generally considered to be relatively healthy desserts, since in general their calories are not high. However, if these are pre-packaged highly processed ones with added sugar in them, then they are not the best choices, since the calories are high due to the presence of sugar. During the preparation of “Mango Pudding Cup”, unsweetened cream is being used to lower the total fat content. Nutritionally, mango is often called the “King of Fruits”, and is a rich source of β-carotene and vitamin C, and these nutrients provide beneficial effects towards the development of vision and immune, as well as the prevention of cardiovascular diseases.

Nutrition Tips

Although mangoes contain a wide variety of nutrients, however, people who have allergies should eat mangoes with cautions, since mangoes contain a substance called “histamine”, which may lead to allergic reactions. Not only do mangoes contain histamine, they also stimulate the immune system to release histamine upon consumption. Therefore, some people who are allergic to mangoes will develop rashes and redness around lips upon consumption, and this condition is caused by the release of histamine.
