雞翼 1磅
雜菌 半斤
車打芝士 少許

醃料

生抽 2茶匙
糖 半茶匙
蠔油 1茶匙
胡椒粉 少許
麻油 少許
蒜茸 1茶匙
薑茸 半茶匙

步驟

  1. 先將雞翼洗淨抹乾水份拆骨,加入醃料醃半小時。
  2. 雜菌炒香,加入鹽和胡椒粉調味。
  3. 將菌放攪伴機攪碎。
  4. 將芝士先釀入雞翼。
  5. 再將雜菌釀入雞翼中,用牙籤縫口。焗爐預熱180度,焗15分鐘,取出後除去牙籤便成。

這 道菜以蛋白質為主,不論芝士、菌類或雞翼都含有豐富的蛋白質,對處於生長期的兒童相當重要。不喜歡飲牛奶的兒童亦可以通過進食這道菜來增加乳製品的攝取, 從而提高優質蛋白質、維生素A、維生素B2和鈣質的攝取量。

芝士其實是牛奶濃縮後、發酵而成的乳製品。亦因芝士屬濃縮物,其蛋白質、鈣質、維生素A、維生素B2是牛奶的7-8倍!當然,芝士亦屬高脂高熱量食品,攝取過量會增加兒童肥胖風險,更會提高血液中LDL水平,從而增加患上心血管疾病風險。最後,外國某些研究顯示,飯後攝取芝士能降低蛀牙風險高達50%,對兒童而言,實屬一個好消息。

Wild Mushroom with Cheese Fermented in Chicken Wings

Ingredients

Chicken Wings 1 lb
Wild mushrooms ½ Kg
Cheddar Cheese a little

Seasoning for marinating

Soya sauce 2 tea spoons
Sugar ½ tea spoon
Oyster sauce 1 tea spoon
Pepper a pinch
Sesame oil a little
Garlic (smashed) 1 tea spoon
Ginger (smashed) ½ tea spoon

Steps

  1. Wash and dry the chicken wings. Then, remove the bones and marinate it with seasoning for 30 minutes.
  2. Fry the wild mushrooms and season it with a little bit of salt and pepper.
  3. Blend the wild mushrooms in a blender.
  4. Put some cheese into the chicken wing.
  5. Add the chopped mushrooms into the chicken wing and use a toothpick to close up the opening.
  6. Preheat the oven at 180 degrees. Place the chicken wings in the oven and bake for 15 minutes.
  7. Remove the toothpick before serving.

Tips

  1. You can choose any types of mushrooms as the filling.
  2. Don’t leave any openings when you close the chicken wing up with the toothpick. Otherwise, the filling will spill out.

Nutrition Analysis

This dish is filled with proteins, from cheese, mushrooms and chicken wings. Protein-rich foods are essential during children's growth. For children that dislike drinking milk, this dish is rich in dairy products as well. Dairy products are rich in complete proteins, vitamin A, B2 and calcium. For children that developed a condition called "Lactose Intolerance", parents can consider substituting cheese for milk, since during the production of cheese most of the lactose will be excreted via whey, thus may be suitable for people with lactose intolerance. Wild mushrooms can increase the fibre content of the dish, making sure children will not forget about the importance of fibre.

Nutrition Tips

Cheese is prepared using milk concentrates that undergoes fermentation. Due to the fact that cheese is considered as a concentrate form, its protein, calcium, vitamin A and B2 content is 7-8 times higher when compared to milk! Nevertheless, cheese is still a high fat high calorie food, and excess intake may increase obesity risk in children, while also increases serum LDL level, leading to an increased risk of cardiovascular diseases. At last, some preliminary researches have suggested that consumption of cheese upon meal may reduce risk of developing oral cavity by up to 50% in children.
