麵包,相信係大家日常,茶點小食的不二選擇,但對於麵包的熱量又會令一些人有所顧慮,今次呢款純素裸麥吐司,熱量低,而且糖、油用量都不多,我地今次更係用上植物油,素食人仕都合適,而且營養亦很不錯,內含好的蛋白質,食起上來有著扎實口感。


裸麥麵包比普通白麵包有更高營養,而且含有更多的膳食纖維,令人有較強的飽腹感,重點係低脂,每50g只有100卡。唔好以為低卡就唔飽肚,呢款吐司的飽腹感係好扎實,所以對於控制飲食的朋友係不錯的選擇。

《純素裸麥全麥頂角吐司》食譜;

材料:
高筋麵粉 Bread Flour:150g
全麥粉 Whole Wheat Flour : 50g
水 Water: 130g
細砂糖 Sugar:20g
鹽 Salt:3g
速發酵母 Yeast:3g
葵花籽油 Sun Flower Oil : 20g

做法: 
1. 將高筋麵粉、全麥粉鹽、細砂糖、酵母混合均勻備用。

2. 加入水、混合成團至無顆粒。
3. 搓揉至麵團開始鬆弛、就可以加入葵花籽油,搓至成團及出現薄膜。

4. 接著就可以把麵團放在已搽小量油的酵內開始進行基礎發酵,即第一次發酵,將麵糰放入碗中用擰乾的濕布/保鮮紙包住,令麵糰發大成兩倍大。

5. 把麵團取出之後、充份排氣、搓圓、用擰乾的濕布/保鮮紙蓋住鬆弛10-15 mins左右。

6. 之後將麵糰壓平再次排氣,滾壓麵團,再次搓圓,之後擀開成牛舌狀。

7. 捲起來,我一般捲約2.5圈為佳。

8. 放入吐司盒,可噴些水,進行麵包製作過程中最後一次的發酵,令麵糰體積發酵至吐司盒8-9分滿

9. 預熱焗爐至210℃,預熱完成即可進行烘焗30 mins。

10. 吐司出爐後馬上從烤模中脫模出來,置在網架上放涼。

11. 等待吐司完全涼透,再用麵包刀切片,會切得更靚。
